Swiss-Style Noodle-Pot (Älplermagronen)

Ingredients
- 400 g potatoes (firm boiling)
- 2 onions
- 350 g short macaroni
- 4 tbsp butter
- 0.5 bunch Chives
- 200 g alpine cheese
- 150 g whipping cream
- Salt
- Pepper
- 500 g apple sauce (more if desired)

Wash, peel and cut the potatoes into 1–1.5 cm cubes. Peel the onion, halve it and slice finely. Heat butter in a pot and sauté the potatoes with onions for 5 minutes while stirring; add the noodles and pour in about 800–900 ml lightly salted water. Bring to a boil with occasional stirring, cover and cook for ~10 minutes until the liquid is almost fully absorbed by the pasta.

Meanwhile wash the chives and cut into very fine rings. Grate the cheese coarsely and mix it together with the cream.

Season everything with salt and pepper, taste, and serve sprinkled with chives over apple sauce.
