Sweet-Spicy Fruit Salad

Ingredients

  • 20 g Ginger
  • 3 tbsp brown sugar
  • 1 tbsp White Wine Vinegar
  • 0.5 lime (juice)
  • 1 Mango
  • 1 Charentais melon
  • 0.5 watermelon
  • 1 handful mint
  • 4 tbsp sweet wine
  • pepper (ground)
  • coarse Sea salt

Instructions

    Peel the ginger and slice it thinly. Add sugar and about 125 ml water to a pot, simmer for about 10 minutes until slightly thickened. Stir in vinegar and lime juice, cool, then remove the ginger.

    Peel the mango, cut the flesh away from the pit, and dice into bite-sized pieces. Remove seeds from both melons, scoop out the flesh, and cube it. Rinse the mint, shake dry, and slice leaves into strips.

    Combine the fruit with the syrup and mint in a bowl, let rest for at least 15 minutes. Drizzle with sweet wine, grind pepper over, sprinkle a little salt, and serve.
