Mint Cookies

Ingredients
- 250 g flour
- 150 g finely ground hazelnuts
- 3 egg yolks
- 1 pinch salt
- 1 tsp gingerbread spice
- 100 g powdered sugar
- 220 g butter
- flour (for working surface)
- 150 g chocolate mint chips
- 3 tbsp powdered sugar

Quickly knead all dough ingredients together, shape into a ball, wrap in foil and chill in the refrigerator for about 30 minutes. Preheat the oven to 180°C with upper and lower heat. On a floured work surface roll the dough thinly to about 4 mm and cut out circles roughly 5 cm in diameter with a cutter. Place half of them on baking trays lined with parchment paper, and from the other half use a smaller cutter to punch holes in the center.

Place these as well on parchment paper. Knead the remaining dough scraps again and process similarly. Bake the cookies in the preheated oven for 10–12 minutes, remove, dip the rings on one side into powdered sugar and let cool. Melt After Eight over a double boiler, stir until smooth and brush the bases with it. Place the rings on top of the sugar, press lightly and allow to dry.
