Sweet Rolls from Yeast Dough

Ingredients
- 0.5 cube fresh yeast (about 21 g)
- 500 g flour
- 1 pinch salt
- 120 g sugar
- 100 g butter
- 1 packet vanilla sugar
- 2 Eggs
- 1 tsp lemon zest
- 80 g melted butter
- 1 tsp cinnamon
- 4 tbsp sugar
- Hagelzucker (for dusting)

Stir the yeast with 200 ml lukewarm water. Mix flour, salt and sugar, put in a bowl, make a well in the center, pour in the yeast mixture and sprinkle some flour on the edges. Cover and let rise in a warm place for about 15 minutes. Add butter, vanilla sugar, eggs and lemon zest to the pre-ferment and mix all ingredients into a smooth dough with hands or an electric hand mixer. If the dough is too wet add more flour; if it’s too dry add a little lukewarm water. The dough should no longer stick to the hands. Cover and let rise for another 60 minutes.

Preheat the oven to 180°C (350°F) with both top and bottom heat.

On a floured work surface knead the dough again, roll into a rectangle (20x30 cm). Brush with melted butter, sprinkle cinnamon and sugar, then roll up from the long side. Cut into 1.5 cm thick slices and place on a parchment-lined baking sheet. Brush with remaining butter, dust with Hagelzucker and bake in the preheated oven for 25-30 minutes until golden brown.

Remove the finished rolls, let them cool and serve.
