Sweet Rice Balls

Ingredients

  • 100 g uncooked sticky rice
  • 100 ml coconut milk (canned)
  • 1 pinch salt
  • 2 tbsp sugar
  • mint

Instructions

    Soak sticky rice in cold water for about 12 hours. Drain well in a sieve. Combine sticky rice, coconut milk, salt and sugar in a pot, adding enough water so the water level is about 1 cm above the rice. Bring to a boil, then cover and simmer over low heat for about 20 minutes until all liquid has been absorbed by the rice. Let the rice cool with the lid open.

    Shape the cooled sticky rice into balls and serve garnished with mint.
