- 230 g butter
- 230 g sugar
- 4 eggs
- 1 pinch salt
- 400 g flour
- 2 tbsp cocoa powder
- 1.5 tbsp freshly grated ginger
- 1 packet baking powder
- 160 ml coconut milk
- butter (for the pan)
- flour (for the pan)
Instructions
-
1.
Chop 150 g of the chocolate. Roast the nuts in a hot pan without fat, remove, let cool and roughly chop.
-
2.
Preheat the oven to 180°C (350°F) with upper and lower heat.
-
3.
Cream the butter with sugar and gradually add the eggs with a pinch of salt. Mix flour with cocoa, ginger, and baking powder, then fold into the butter mixture alternately with coconut milk. Finally fold in the chocolate and nuts.
-
4.
Pour the batter into a greased and floured loaf pan, spread evenly, and bake in the preheated oven for about 50 minutes; test with a skewer.
-
5.
Chop the remaining chocolate, melt it over a hot, non-boiling water bath, remove from heat, and let cool slightly.
-
6.
Take the finished cake out of the oven, allow to cool briefly, release from the pan, and pour the melted chocolate over it. Spread it evenly and let set. Slice and serve.
