Sweet Pumpkin Waffles

These pumpkin waffles will sweeten your autumn!

Ingredients

  • 200 g spelt whole‑grain flour
  • 1 tbsp baking powder
  • a pinch salt
  • 1 tsp cinnamon
  • 1 vanilla bean (filling)
  • 3 medium eggs
  • 160 ml milk (1.5% fat) or plant milk
  • 150 g pumpkin puree
  • 2 tbsp maple syrup (plus more for drizzling)

Instructions

    Whisk spelt flour, baking powder, salt, cinnamon and the vanilla bean filling in a large bowl.

    Beat the eggs until frothy in another bowl; then fold in the milk, pumpkin puree and maple syrup with the egg foam.

    Add the wet mixture to the dry batter and stir until well combined.

  4. 4.

    Preheat the waffle iron. Pour about two tablespoons of batter into the center of each hot section, close the lid, and bake for roughly three to five minutes until golden brown.

    Serve the finished pumpkin waffles drizzled with maple syrup as desired.
