Florentine Slices

Ingredients
- 150 g flour
- 50 g sugar
- 1 packet vanilla sugar
- 1 Egg white
- 65 g cold butter
- 25 g cherry filling
- 50 g butter
- 100 g sugar
- 2 tbsp honey
- 125 g whipping cream
- 400 g almond sticks
- 100 g dark chocolate couverture
- powdered sugar (for dusting)

Knead flour, sugar, vanilla sugar, 2 tbsp water, egg white and butter into a smooth dough, shape into a ball, wrap in cling film and chill for about an hour.

Roll the dough between two sheets of parchment paper to a thickness of about 3 mm and place on a baking sheet lined with parchment paper.

Chop the cherries for the topping. Melt butter, sugar and honey in a large pan while stirring until lightly browned. Stir in cream and simmer for about 2 minutes. Add almonds and cherries, then simmer gently for another 3 minutes until thickened. Spread almond mixture over the dough, smooth it out and bake in a preheated oven at 180°C (lower rack) for about 10–12 minutes. Remove and cut into pieces roughly 1.5 × 5 cm while still hot on the baking sheet; let cool.
