Sweet Potato Salad with Mozzarella and Dill
The sweet potato salad with mozzarella and dill from Spoonsparrow always tastes delicious.
Ingredients
- 500 g firm potatoes (5 firm potatoes)
- Salt
- 500 g sweet potatoes (2 sweet potatoes)
- 3 spring onions
- 10 g Dill (0.5 bunch)
- 5 g chives (1 handful)
- 3 tbsp white wine vinegar
- 2 tbsp olive oil
- 2 tbsp vegetable broth
- Pepper
- 250 g mozzarella (9% fat) (4 balls)
Instructions

Peel the potatoes, cut into 1 cm cubes and boil in salted water for about 15 minutes. Meanwhile peel the sweet potatoes and cube them.

After 5 minutes add the sweet potatoes to the pot and cook for an additional 10 minutes. Drain the potatoes in a sieve and let cool for about 10 minutes.

In the meantime trim, wash and finely chop the spring onions. Wash the dill, pat dry and chop. Wash the chives and pat dry.

Mix the potatoes, dill, vinegar, oil and broth and season with salt and pepper.

Plate the salad on dishes. Slice the mozzarella and place on top of the potato mixture. Distribute the spring onions over it, season with pepper and garnish with chive stems.
