Ingredients

  • 0.5 cucumber
  • Salt
  • 1 Garlic clove
  • 300 g Greek yogurt
  • 1 tbsp Lemon Juice
  • pepper (ground)
  • 150 g pitted black olives (Kalamata olives)
  • olive oil (for drizzling)

    Peel the cucumber, cut it lengthwise in half, use a spoon to remove seeds and grate; sprinkle with a little salt and let it sit for about 15 minutes to draw out water. Peel and finely chop the garlic.

    Whisk the yogurt with the garlic and lemon juice until smooth. Squeeze the grated cucumber to release excess liquid, fold into the yogurt mixture, season with salt and pepper. Arrange on a plate with olives and drizzle with olive oil before serving.
