Ingredients
- 350 g potatoes
- 200 g Flour
- 100 g sugar
- 100 g raisins
- 40 ml rum
- 0.5 untreated lemon (grated zest)
- 1 tsp cinnamon
- 1 tsp cardamom
- 1 tsp Baking powder
- 80 g Butter
- 3 eggs
- 1 pinch salt
- sugar (for dusting)
- butter (for the springform)
- 4 tbsp liquid butter (for brushing)

Soak raisins in rum.

Butter a springform pan and dust with crumbs.

Peel and grate potatoes. Add flour, sugar, raisins, lemon zest, spices, baking powder, butter, eggs, and salt to the potatoes and knead into a smooth, supple dough. Pour into the pan, smooth the top, and bake in a preheated oven at 180°C fan-forced for about 40-50 minutes (test with a wooden stick).

Remove from oven, brush with liquid butter and dust with sugar. Let cool in the pan.
