Sweet Potato Cake

Ingredients
- 400 g flour
- 1 cube fresh yeast
- 0.13 l lukewarm milk
- 180 g sugar
- 250 g cooked potatoes from yesterday (peeled)
- 150 g margarine
- Salt
- 1 untreated lemon (zest)
- 100 g butter
- cinnamon-sugar mixture
- parchment paper

Sift the flour into a bowl and make a well in the center. Crumble the yeast, stir with 5 tbsp milk and 1 tsp sugar until smooth, then pour into the well. Mix in a little flour and cover; let rise in a warm place for about 30 minutes.

Meanwhile, grate the potatoes finely and mix with margarine, remaining sugar, milk, a pinch of salt, and lemon zest. Add this potato mixture to the dough and knead thoroughly. Let rest again for at least 45 minutes.

Preheat the oven to 200°C (392°F). Line a baking sheet with parchment paper. Roll out the dough and place it on the sheet. Prick several times with a fork and bake for 30-40 minutes until golden yellow.

Melt the butter in a small saucepan, brush over the cake before serving, and sprinkle with cinnamon sugar.
