Sweet Potato Potato Salad

Ingredients

  • 600 g waxy potatoes
  • 200 g sweet potatoes
  • Salt
  • 150 g peas
  • 4 eggs
  • 2 pickles (with pickle brine)
  • 2 tbsp wine vinegar
  • 0.5 tsp Curry Powder
  • 150 g yogurt
  • Pepper
  • fresh chopped parsley (for garnish)

Instructions

    Peel the potatoes and sweet potatoes and cook in salted water for about 30 minutes. Add peas during the last 5 minutes. Drain, let the potatoes cool, shock the peas in cold water, then drain well. Dice the potatoes.

    Hard boil the eggs. Shock, peel, set aside two for garnish, chop the rest. Dice the pickles. Whisk 2-3 tbsp pickle brine with vinegar and curry into yogurt, season with salt and pepper.

    Combine the prepared salad ingredients with the dressing and serve on plates. Garnish the sweet potato potato salad with quartered eggs and sprinkle parsley before serving.
