Ingredients

  • 400 g flour
  • 4 eggs
  • 3 tbsp oil
  • Salt
  • flour (for the work surface)
  • 2 tsp beetroot powder
  • 2 tsp squid ink
  • 3 tsp spinach powder

Instructions

    All ingredients for the dough should be at room temperature. Place the eggs with the oil, flour and a pinch of salt in a bowl. Stir all ingredients with a wooden spoon and quickly knead into a smooth dough by hand, then divide into 4 parts.

    Knead one part with beetroot powder, a second part with squid ink, and the third part with spinach powder. Shape each into balls, wrap in cling film and refrigerate for 30 minutes.

    Roll the dough thin on a floured surface and cut rectangles (2x5 cm) with a pasta cutter. Press them together in the middle, dust with a little flour and let rest for 10 minutes. Boil in salted water until al dente and serve with sauces of choice or as a side dish.
