Sweet Potato Foil Packets with Herb Butter

Ingredients
- 2 cloves garlic
- 250 g soft butter
- 3 tbsp finely chopped mixed herbs (e.g., chives, parsley, dill)
- 2 tsp finely chopped thyme
- 2 tbsp lemon juice
- salt to taste
- 4 sweet potatoes
- 2 tsp oil
- aluminium foil
Instructions

Peel the garlic and press it through a press. In a warm bowl beat the butter until creamy and mix in the garlic, herbs, lemon juice, and salt. Place the butter on plastic wrap, roll into a log, wrap tightly, and refrigerate for at least 2 hours before serving; slice into portions when ready.

Wash the sweet potatoes thoroughly, lightly oil them, slit lengthwise, and tightly wrap each in two layers of aluminium foil. Place the wrapped potatoes side‑edge down on the grill grates over direct heat and cook for 30–45 minutes, turning occasionally. Remove from the grill, unwrap, gently pull apart, and serve with herb butter.
