Chinese Ribbon Noodles with Herbs
Fresh Chinese ribbon noodles tossed with garlic, shallots, scallions, sun‑dried tomatoes and a bright lime‑peanut sauce. A quick, aromatic starter that showcases the flavors of Asia.
Ingredients
- 400 g Chinese ribbon noodles
- Salt
- 2 cloves garlic
- 2 shallots
- 2 Spring Onions
- 40 g sun‑dried tomatoes in oil
- 2 tbsp peanut oil
- 250 ml instant vegetable broth
- 5 tbsp lime juice
- 4 tbsp finely chopped herbs
- ground pepper
Instructions

Cook the ribbon noodles according to package instructions until al dente. Drain and set aside.

Peel and finely chop the garlic and shallots. Trim, wash, and finely slice the spring onions. Pat the sun‑dried tomatoes dry and cut into thin strips.

Heat peanut oil in a wok or deep skillet over medium heat. Briefly sauté the garlic, shallots, spring onions, and tomatoes until fragrant. Add the noodles. Pour in the vegetable broth and lime juice; let the mixture simmer for 4 minutes on moderate heat, stirring occasionally. Fold in the herbs. Season with salt and pepper to taste and serve immediately.
