Ingredients

  • 200 ml coconut milk
  • 50 g sugar
  • 60 g polenta
  • 2 Bananas
  • plant fat (for the ramekins)
  • powdered sugar (to dust)

Instructions

    Preheat the oven to 180 °C with top and bottom heat. Bring coconut milk, 100 ml water and sugar to a boil in a pot. Stir in the polenta, remove from heat and let it thicken while stirring for about 3 minutes. Peel the bananas and slice them.

    Grease four souffle ramekins and pour in the polenta. Arrange banana slices on top and press them into the polenta. Bake in the oven for about 15 minutes, then dust with powdered sugar before serving.
