Chocolate Cream

Ingredients

  • 300 g dark milk chocolate
  • 1 small strong espresso
  • 20 ml cognac
  • 5 eggs
  • 3 tbsp vanilla sugar
  • 125 g chilled whipping cream
  • 50 g sugar
  • 300 g strawberries (or raspberries or currants)
  • 8 cantucci Italian almond cookies

Instructions

    Wash strawberries, pat dry and halve. Place a few halves in each glass bowl.

    Coarsely chop chocolate and melt with cognac and espresso over simmering water. Remove from heat. Separate eggs; beat yolks with vanilla sugar until fluffy, then add melted chocolate. Whip chilled cream to stiff peaks. Beat egg whites with sugar into stiff meringue. Fold yolk mixture into chocolate, then fold in whipped cream quickly before it sets.

    Fold in meringue gently.

    Fill glass bowls, top with more strawberry halves and refrigerate for at least 3 hours. Serve garnished with almond cookies.
