Sweet Chocolate Sushi

Ingredients

  • 200 ml heavy cream (at least 30% fat)
  • 250 g dark couverture chocolate (50% cocoa content)
  • 200 g milk couverture chocolate (30% cocoa content)
  • 20 ml cognac
  • 100 g Soft Butter
  • 500 ml coconut milk
  • 150 g sugar
  • 250 g rice pudding
  • 200 g fresh ripe strawberries

Instructions

    Chop both types of couverture and place in a bowl. Bring the cream to a boil, pour over the chopped chocolate, and gently stir until melted. Gradually fold in the cognac. Let the mixture cool and rest for at least 5 hours.

    Cut the butter into small pieces and gradually stir into the chocolate‑cream mixture. Spread the batter thinly (0.4 mm) onto a parchment paper‑lined baking sheet.

    Bring the coconut milk and sugar to a boil in a pot, then add the rice. Simmer over medium heat, stirring occasionally for about 30 minutes.

    Trim, wash, and cut the strawberries into sticks. Evenly spread the cooled rice pudding over the chocolate, place strawberry sticks in the center, and roll into a 3 cm thick cylinder using the parchment paper. Slice into 2 cm thick rounds to serve.
