Ingredients

  • 50 g palm sugar
  • 50 g walnut kernel halves
  • 50 g ghee (or clarified butter)
  • 200 g chickpea flour
  • 150 g coconut flakes
  • 0.25 tsp cardamom powder
  • 0.25 tsp cinnamon powder

    Grate the palm sugar finely. Chop the walnut kernel halves. Warm the ghee in a pot. Add the chickpea flour and stir constantly over low heat for 5 minutes so it does not burn. Add the palm sugar and cook, stirring, for about another 15 minutes until the mixture turns brownish and develops a mild nutty aroma.

    Add 1 tbsp water, 3 tbsp coconut flakes, the chopped walnut kernels, cardamom and cinnamon powders. Heat over low heat for another 5-7 minutes while stirring until a fairly firm mass forms. Let the chickpea flour dough cool slightly. With wet hands shape walnut-sized balls and roll them in the remaining coconut flakes.
