Saffron Almond Pudding with Pistachios

Ingredients
- 100 g peeled almonds (ground)
- 400 ml milk
- 20 g semolina
- 1 tsp ground cardamom
- 0.5 sachet saffron strands (2 g)
- 2 tbsp ghee (or clarified butter or butterscuttle)
- 100 g sugar
- 20 g pistachios
- 20 g almonds
Instructions

Whisk the ground almonds with milk, semolina, cardamom, and saffron strands. Heat the ghee in a pot, pour in the almond-milk mixture, and bring to a boil while stirring. Simmer on low heat for 5 minutes, stirring constantly.

Add sugar and continue cooking for another 8-10 minutes until thickened into a creamy consistency, stirring frequently. Pour the pudding into dessert bowls. Roughly chop almonds and pistachios and sprinkle over the top.
