Sweet and Sour Curry with Vegetables and Fruit

Ingredients

  • 1 Spring onion
  • 0.25 parsnip
  • 2 Tomatoes
  • 0.5 red bell pepper
  • 2 cooked potatoes
  • 3 pickled baby corn (drained)
  • 2 tbsp oil
  • 1 pineapple ring (drained)
  • 0.5 Mango
  • 1 tsp chili flakes
  • 50 ml mango puree
  • 100 ml coconut milk
  • Salt
  • Pepper

Instructions

    Peel and chop the onion into pieces. Wash, halve, seed, and cut the parsnip into sticks. Wash, halve, seed, and slice the tomatoes into wedges. Halve, seed, remove inner skins from the bell pepper, then cut into thin strips.

    Peel and cube the potatoes. Cut the corn cobs into pieces. Heat oil in a wok and stir-fry the vegetables. Slice the pineapple rings into wedges. Peel the mango and dice the flesh. Mix the fruit with the vegetables and season with chili.

    Stir in the mango puree and coconut milk, then reheat everything. Season with salt and pepper, serve in bowls.
