Swede Pot with Pork Sausage

Spoonsparrow Swede pot: hearty soup for wet-cold days!
Ingredients
- 1 small swede (kale)
- 300 g starchy potatoes
- 4 Carrots
- 200 g celery root
- 1 large onion
- 2 tbsp Rapeseed oil
- 400 g pork sausage
- 1.5 l meat broth
- 1 bunch parsley
- Salt
- Pepper
Instructions

Clean the swede, remove outer leaves, halve it, cut off the core in a wedge shape. Wash and pat dry the leaves, then slice into strips.

Wash, peel, and dice the potatoes. Wash, peel, and cube the carrots and celery root. Peel and finely chop the onion, then sauté in oil for 2–3 minutes.

Add swede, potatoes, carrots, and celery to the onions and cook together for 4 minutes. Pour in the meat broth, cover, and simmer for 20 minutes.

Slice the sausages and add them to the pot. Simmer for another 10 minutes. Season with salt and pepper.

Wash the parsley, shake off excess water, and cut into fine strips. Sprinkle over the pot and serve.
