Chicken Bami Goreng

- 400 g Asian egg noodles
- Salt
- 200 g Chicken breast fillet
- 3 spring onions
- 2 carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 4 spinach leaves
- 2 Garlic cloves
- 10 g ginger
- 4 tbsp soy oil
- 3 tbsp Soy sauce
- 1 tsp Sambal oelek
- 1 tbsp sweet soy sauce (ketjap manis)
- 0.25 bunch fresh cilantro stems

Cook noodles in salted water according to package instructions, drain and set aside.

Wash and trim spring onions, slice into rings. Peel carrots, halve, quarter, and cut into thin sticks. Wash bell peppers, halve, seed, and slice lengthwise into fine strips. Wash spinach leaves, remove stems, and cut into thin ribbons. Peel garlic and ginger, finely chop them.

Heat oil in a wok or large pan, add chicken, garlic, ginger, and sambal oelek; stir‑fry over high heat for 4 minutes. Add bell peppers, spring onions, carrots, and spinach; cook for another 2 minutes. Toss in noodles, soy sauce, and sweet soy sauce, mix well and simmer for 2 more minutes. Season with salt.
