Potato Salad with Radishes

Ingredients
- 800 g early potatoes
- 250 g radishes
- 0.5 handful tarragon
- 1 small Romaine lettuce head
- 100 ml Vegetable broth
- 3 tbsp Rapeseed oil
- 3 tbsp fruit vinegar
- Salt
- Pepper
Instructions

Wash potatoes thoroughly and boil in water for 20–25 minutes. Let cool, keep smaller whole, halve larger ones.

Wash 8 nice radishes with greens and set aside. Wash remaining radishes, trim and slice into rounds or wedges.

Rinse tarragon, shake dry, pluck leaves. Wash Romaine, trim and cut leaves into strips. Combine potatoes with radish slices, tarragon, and Romaine in a large bowl.

Whisk broth with oil and vinegar. Season with salt and pepper, then dress the potato salad. Let rest about 30 minutes to meld flavors.

Serve by spreading salad onto bowls and garnish with remaining radishes. Enjoy your potato salad with radishes.
