Swabian-Style Apple Cake
The Swabian-style apple cake from Spoonsparrow is always a good idea!
Ingredients
- 180 g soft butter
- 1 tbsp whole wheat breadcrumbs
- 750 g apples
- 0.25 organic lemon
- 120 g raw cane sugar
- 3 eggs
- 1 tsp vanilla powder
- 150 g Spelt flour Type 1050
- 0.5 tsp Baking powder
- 60 g raisins
- 60 g sliced almonds

Grease a springform pan with 15 g butter and dust it with breadcrumbs.

Peel, core, and cut the apples into even slices; drizzle with a little lemon juice.

Beat 150 g butter until fluffy, then alternately add 100 g raw cane sugar and the eggs. Stir in vanilla powder, flour, and baking powder. Pour the batter into the springform pan and smooth the surface.

Evenly distribute apple slices over the batter. Sprinkle raisins on top. First scatter almonds, then the remaining raw cane sugar. Dot with small butter lumps. Bake the cake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 35–45 minutes until golden.

If desired, cover the cake halfway through baking with foil to prevent excessive browning.
