French Plum Cake

A French plum cake from Spoonsparrow is delicious, quick to make and brings late summer to the table.
Ingredients
- 5 g Butter (1 tsp)
- 4 eggs
- 80 g coconut blossom sugar (4 tbsp)
- 1 tsp vanilla powder
- 50 g whole grain flour (e.g., spelt)
- Pinch of salt
- 1 tsp Baking powder
- 100 g low-fat quark
- 75 ml milk (1.5% fat)
- 400 g plums
- 1 tsp powdered erythritol sugar (optional)

Grease an oven-safe pan or 24 cm diameter baking dish with butter.

Beat the eggs with coconut blossom sugar and vanilla powder until frothy. Add flour, a pinch of salt, baking powder, quark, and milk; mix well and pour into the prepared pan.

Wash, pit, slice the plums into wedges, and spread them over the batter. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 35 minutes until golden brown.

Remove from the oven and dust with powdered sugar if desired.
