Surimi Grain Salad

Ingredients

  • 250 g soft wheat
  • 600 ml Vegetable Broth
  • 2 tbsp white balsamic vinegar
  • 1 tsp Honey
  • 2 tbsp olive oil
  • Salt
  • pepper (ground)
  • 40 g walnut kernels
  • 75 g surimi
  • 75 g cocktail shrimp
  • 100 g cream cheese

Instructions

    Cover the soft wheat with broth and simmer gently for about 10 minutes, or as directed on the package. If needed, add a little more broth.

    Whisk together the vinegar, honey, oil, salt, and pepper to make the dressing. Drain the wheat if necessary and fold in the dressing. Let it cool slightly before letting it rest.

    Coarsely chop the walnuts. Pat the surimi and shrimp dry and cut into small pieces. Mix them with the walnuts and cream cheese into the wheat, season as desired, and serve in glasses or bowls.
