The Superfood salad with avocado and apple from Spoonsparrow is quick to make and super healthy.
Ingredients
- 0.5 lemon (juice)
- 1 tbsp honey
- 2 tbsp olive oil
- 2 tbsp vegetable broth
- Salt
- Pepper
- 100 g Baby spinach
- 15 g pine nuts (1 tbsp)
- 15 g Pumpkin seeds (1 tbsp)
- 450 g small zucchini (3 small zucchinis)
- 3 celery stalks
- 3 green apples (Granny Smith)
- 1 Avocado
- 20 g walnut kernels (1 heaping tbsp)

For the dressing, whisk lemon juice with honey, olive oil and broth. Season with salt and pepper. Clean, wash and pat dry the spinach.

Toast the nuts in a dry pan over medium heat. Wash and peel the zucchini, then slice lengthwise into thin strips. Clean the celery, optionally core it, and cut into small pieces. Wash the apples, halve them, remove seeds and chop finely. Halve the avocado, remove the pit, lift the flesh from the skin and slice.

Arrange avocado, celery, spinach, apples and zucchini on a plate. Drizzle with dressing and sprinkle with pine nuts, pumpkin seeds and walnuts.
