Ingredients
- 200 g soba noodles
- 200 g red Chinese daikon radish
- 4 Spring Onions
- 200 g smoked salmon
- 0.5 bunch Thai basil
- 1 tbsp Sesame oil
- 1 tsp soy sauce
- Banana leaf (for serving)
- 2 tbsp peanuts (for garnish)
- Soy sauce (for garnish)

Cook the soba noodles according to package instructions, then rinse under cold water and drain. Wash, trim, and slice the daikon radish into thin strips or shave it. Rinse and cut the spring onions into ~2 cm pieces. Cut the smoked salmon into ~4 cm strips. Remove the leaves from the Thai basil stems.

Toss the soba noodles with the daikon, spring onions, salmon, soy sauce, and sesame oil gently. Arrange on banana leaf sheets. Sprinkle with basil leaves and top with peanuts. Serve each portion with a small bowl of soy sauce for dipping the salmon.
