  • 500 g low‑fat quark
  • 8 tbsp buttermilk
  • Salt
  • Pepper
  • 4 tbsp finely chopped herbs (cress, chives, parsley)
  • 2 bunches radishes
  • 1 bunch spring onions
  • 150 g arugula
  • 2 tbsp white wine vinegar
  • 3 tbsp oil
  • 4 slices sunflower seed bread

    Whisk quark with buttermilk, a pinch of salt and pepper. Fold in the herbs.

    Wash and thinly slice the radishes. Clean and finely chop the spring onions. Rinse the arugula and let it drain. Whisk vinegar with oil, salt, and pepper; combine with radishes, spring onions, and arugula. Plate sunflower seed bread topped with quark and salad.
