Ingredients

  • 4 tbsp salad mayonnaise
  • 1 tbsp freshly grated horseradish (or jarred)
  • Lemon juice
  • a pinch of sugar
  • Salt
  • ground pepper
  • 4 cornichons
  • 1 large cooked beetroot
  • 8 slices of toast bread
  • 200 g thinly sliced pastrami

Instructions

    Stir the salad mayonnaise with horseradish, reserving a little for garnish. Season with lemon juice, salt, pepper and sugar.

    Slice the cornichons and beetroot into rounds.

    Spread the thick layer of horseradish mayo on four slices of toast bread; spread the remaining slices thinly.

    Layer the thick‑coated slices with cornichons, beetroot and pastrami. Sprinkle the reserved grated horseradish over the top. Cover with the remaining toast slices.
