Soup with Bacon Dumplings

Ingredients

  • 250 g white bread (from yesterday)
  • 125 ml milk
  • 1 Shallot
  • 100 g South Tyrolean bacon
  • 1 EL Butter
  • 1 EL freshly chopped parsley
  • 1 EL freshly chopped thyme
  • 1 egg
  • Salt
  • Pepper (freshly ground)
  • breadcrumbs (as needed)
  • 1 l rich beef broth
  • 2 EL chives rings

Instructions

    Dice the bread and place it in a bowl. Bring the milk to a boil and pour over the bread. Peel the shallot and dice it together with the bacon. Sauté briefly in hot butter, then mix with parsley, thyme, and egg under the bread. Season with salt and pepper, adding breadcrumbs if desired. Form about 12 small dumplings from the mixture. Drop them into plenty of boiling salted water and simmer gently for 10-15 minutes.

    Lift the dumplings with a slotted spoon and arrange on plates. Pour the seasoned broth over them and sprinkle with chives before serving.
