Potato Salad with Matjes

Ingredients
- 400 g potatoes (mostly waxy)
- 1 stalk celery root (about 100 g)
- 8 matjes fillets
- 4 Spring Onions
- 4 pickled cucumbers
- 250 g crème fraîche
- Salt
- Pepper (freshly ground)
- 0.5 tsp Sugar
- 1 tbsp Lemon Juice
- 0.5 bunch parsley (for garnish)
Instructions

Cook the potatoes as whole boiled potatoes for 20-30 minutes, then cool and peel them.

Meanwhile, bring a pot of salted water to boil for the celery root.

Peel the celery root and grate it finely; blanch in boiling salted water briefly, shock in cold water, and drain.

Pat the matjes fillets dry with kitchen paper and cut into bite-sized pieces.

Slice the spring onions into rings and the pickled cucumbers into rounds.

Whisk together the crème fraîche, spices, and lemon juice to make a dressing.

Cube the potatoes and mix them with the other ingredients in the dressing; let sit for 1 hour.

Finely chop the parsley, taste the salad again, and sprinkle with parsley before serving.
