Ingredients
- 250 g Sugar snap peas
- Salt
- 1 Shallot
- 3 tbsp white wine vinegar
- ground pepper
- 1 tbsp Medium-hot mustard
- 6 tbsp oil
- 3 Carrots
- 1 kohlrabi

Blanch the sugar snap peas in plenty of boiling salted water for 3-4 minutes. Drain into a colander, shock with ice water and let drain.

Peel and dice the shallot, add to a salad bowl. Add vinegar, a pinch of salt, pepper, mustard, then gradually whisk in the oil.

Peel carrots and kohlrabi, slice into thin long strips. Toss immediately with the vinaigrette. Fold the sugar snap peas and herbs into the salad and let everything rest briefly.
