Ingredients

  • 8 prawns
  • 500 g asparagus spears
  • 20 g fresh ginger
  • 3 Garlic cloves
  • 1 bunch Basil
  • 20 g lemongrass
  • 250 ml peanut oil
  • 125 ml sesame oil
  • 4 sea bass fillets
  • Szechuan peppercorns
  • Salt
  • 8 red peppercorns

Instructions

    Peel the prawns and remove the vein. Peel the asparagus spears, cut thicker spears lengthwise in half and slice into 2 to 3 mm thick pieces. Peel the ginger and dice finely. Separate two garlic cloves for thin slices and mince the rest finely. Lightly rinse the basil, shake dry and pluck leaves from stems.

    Heat ginger, minced garlic, and lemongrass in a wok or non‑stick pan with half of the peanut oil. In the remaining peanut oil fry the garlic slices until golden yellow, then add the basil leaves. Drain both on kitchen paper.

    Heat sesame oil in a pan, sear the sea bass fillets and prawns. Add the asparagus and season with chopped garlic, ginger, lemongrass, Szechuan peppercorns and salt.

    Place a portion of asparagus, sea bass fillet and prawns on each plate and garnish with garlic slices, red peppercorns and basil leaves.
