Ingredients

  • 800 g small beetroot roots (with stem base)
  • 1 tsp freshly chopped rosemary
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 3 tbsp white balsamic vinegar
  • 100 ml Vegetable broth
  • 1 tsp Honey
  • Sea salt
  • 1 tbsp fresh chopped parsley

Instructions

    Preheat the oven to 200 °C with upper and lower heat.

    Wash, peel, and clean the beetroot. Cut into strips and place in a baking dish together with rosemary and pressed garlic cloves. Mix olive oil, vinegar, broth, honey, and salt over the beetroot and cover with aluminum foil. Bake in the preheated oven for about 1 hour. During the last ~20 minutes remove the foil.

    Stir in parsley and serve arranged in a bowl.
