Ingredients

  • 250 g butter
  • 250 g sugar
  • 1 egg
  • 1 bottle bitter almond essence
  • 125 g ground almonds
  • 350 g flour
  • 300 g powdered sugar
  • 7 tbsp lemon juice
  • various colored sugar lettering (tubes from the baking aisle)
  • baking paper

Instructions

    Line a baking sheet with baking paper. Preheat oven to 200°C. Whisk butter, sugar, egg and bitter almond essence until fluffy. Add almonds and flour and knead into dough. Shape dough into rolls about 6 cm in diameter. Cut 1 cm thick rounds from the rolls and place on the baking sheet.

    Bake in convection oven at 180°C for 13 minutes. Let cool. Mix powdered sugar and lemon juice into a smooth glaze. Brush cookies with glaze. Allow glaze to dry. Use colored sugar lettering to paint Santa heads or other Christmas motifs on the cookies.
