- 800 g waxy potatoes
- 150 g bacon
- 1 onion
- 1 tbsp plant oil
- 200 ml milk
- 2 tbsp crème fraîche
- 1 Tbsp freshly chopped thyme
- Salt

Wash the potatoes and steam for about 30 minutes until tender. Dice the bacon finely. Peel and dice the onion. Sauté in hot oil for 2-3 minutes.

Peel the cooked potatoes, press through a potato masher, and mix with warm milk, the rendered bacon fat, and crème fraîche. Season with salt and top with bacon-onion cubes and thyme before serving.
