Stuffed Zucchini with Ham

Ingredients
- 5 medium zucchinis
- 100 g cooked ham
- 1 bundle mixed herbs (parsley, basil, tarragon)
- 1 tbsp Olive Oil
- Salt
- Pepper (freshly ground)
- 100 g Mozzarella
- tarragon

Wash the zucchini and remove the flower and stem ends. Slice four zucchinis lengthwise and scoop out the seeds with a spoon; dice one zucchini into small cubes.

Cut the ham into fine pieces.

Rinse the herbs, shake dry, and finely chop them.

Slice the mozzarella into thin rounds.

Sauté the ham in hot oil, add the diced zucchini, cook briefly, season with salt and pepper, then fold in the chopped herbs.

Fill the hollowed zucchini halves with the mixture, place on a greased baking sheet, top each half with mozzarella slices, and bake in a preheated oven at 180°C for about 10 minutes. Serve immediately garnished with tarragon.
