Stuffed Zucchini

Ingredients

  • 8 round zucchini
  • 2 red bell peppers
  • 1 clove garlic
  • 1 onion
  • 1 tbsp Olive Oil
  • 250 g cream cheese
  • 1 egg
  • 1 tbsp freshly chopped sage
  • 2 Tbsp grated Parmesan
  • Salt
  • Pepper

Instructions

    Wash the zucchini, trim a small horizontal cut on the bottom of each for better standing and remove the tops. Hollow out the flesh and chop the trimmed base. Wash, halve, deseed, and finely dice the bell peppers. Peel and finely dice the garlic and onion. Sauté together with the peppers and zucchini flesh for 2-3 minutes, then let cool.

    Preheat the oven to 180°C fan.

    Combine the sautéed vegetables with cream cheese, egg, sage, and parmesan. Season with salt and pepper, then fill the hollowed zucchini. Place on a baking sheet lined with parchment paper, cover with the tops, and bake for about 25 minutes until golden brown. Remove the tops and serve.
