Ingredients

  • 8 zucchini blossoms
  • 1 onion
  • 8 tbsp pureed tomatoes
  • 100 g long‑grain rice
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Clean the zucchini blossoms from their husks, gently shake off dust and wash. Let them drain well.

    Peel the onion, finely chop it and mix with pureed tomatoes, rice and oil, seasoning with salt and pepper. Carefully fill the mixture into the blossoms, turn the blossom tips together gently and place tightly side by side in a pot.

    Pour enough water to just cover the pot and cook the covered blossoms over medium heat for 25–30 minutes. Remove and serve arranged on a plate.
