Goat Cheese with Bell Pepper Terrine

- 1 yellow bell pepper
- 1 green bell pepper
- 1 red bell pepper
- 3 sprigs tarragon
- 400 g goat cheese
- Salt
- pepper (ground)

Preheat the oven to grill mode. Wash, trim, and quarter the peppers. Place the pepper quarters skin side up on a baking sheet and grill until the skins are charred. Let them cool under a damp kitchen cloth.

Meanwhile, wash the tarragon, shake dry, and finely chop all but 2-3 leaves for garnish. Beat the goat cheese with a fork, add the chopped tarragon, salt, and pepper.

Line a small bowl or dish (about 500 ml) with plastic wrap. Peel off the skins from the peppers and cut the flesh into strips. Arrange half of the pepper strips on the bottom of the dish and fill with half the cheese mixture, pressing firmly.

Spread the remaining pepper strips over the cheese layer and cover with the rest of the cheese. Press again, cover with plastic wrap, and refrigerate for at least 3 hours. Just before serving, lift out with the plastic wrap and garnish with tarragon leaves.
