Ingredients

  • 12 fresh zucchini blossoms
  • 2 Spring Onions
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 150 g long-grain rice
  • Salt
  • 2 tbsp chopped mixed herbs
  • pepper (ground; e.g., basil, parsley, chervil)
  • 2 tbsp lemon juice
  • 1 tbsp hazelnut oil

Instructions

    Gently wash the zucchini blossoms, pat dry and remove the stamens from the center.

    Wash and trim the spring onions, finely chop the white parts and slice the green into rings. Peel and finely chop the garlic. Sauté the onion whites and garlic in hot oil, add the rice, stir, pour in twice the amount of water, season with salt and simmer gently for about 20 minutes until the rice is cooked. Stir in the onion greens and herbs, then season the mixture with salt, pepper, lemon juice and hazelnut oil.
