Ingredients

  • 100 g dried pickled tomatoes (in oil)
  • 300 g puff pastry (frozen)
  • 1 egg yolk
  • 300 g goat cream cheese (as roll)
  • 4 tbsp olive oil (for drizzling)
  • pepper (from grinder)
  • 12 capers

Instructions

    Blend the dried tomatoes with 2-3 tbsp tomato oil into a fine puree. Preheat the oven to 180°C fan. Thaw the puff pastry and roll it thinly on a floured surface; spread half of the tomato puree over one side and fold the other side over it. Press the edges firmly together and cut the pastry into 1.5 cm wide strips.

    Place the strips on a baking tray lined with parchment paper, brush them with egg yolk, and bake in the preheated oven for about 20 minutes until golden yellow. Remove and let cool. Slice the goat cheese roll into 3 cm thick slices; place three upright slices on a plate, drizzle with olive oil, sprinkle pepper, and top each slice with one caper. Arrange the pastry sticks around the cheese and serve.
