Ingredients

  • 3 handfuls of wild rocket (or starry rocket)
  • 500 g spinach leaves
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 1 pinch cumin
  • 1 splash Lemon juice
  • 4 pieces of seitan 200 g each (wheat meat)
  • 4 slices vegan cheese (e.g. nutritional yeast cheese)
  • 4 tbsp light sesame oil
  • 1 tbsp margarine

Instructions

    Rinse the starry rocket and drain it. Wash the spinach thoroughly, remove tough stems and blanch in boiling salted water for 1-2 minutes. Finally add a short splash of the starry rocket, then pour over cold water to shock. Drain well and roughly chop. Season with salt, pepper, nutmeg, cumin and lemon. Slice each seitan lengthwise to create a pocket. Spoon 2–3 tbsp of spinach mixture into each pocket and place a slice of cheese on top. Optionally secure with toothpicks.

    Heat the sesame oil in a pan and fry the seitan slices for about 5 minutes on each side over medium heat.

    In another pan, melt the margarine and warm the remaining spinach for a few minutes while stirring. Taste again and serve with the seitan pockets.
