Fried Seitan over Rice

Ingredients
- 200 g Long grain rice
- Salt
- 3 tbsp sesame seeds
- 1 dried chili pepper (more to taste)
- 4 tbsp rapeseed oil
- 500 g seitan
- rapeseed oil (for frying)
- 2 tbsp Soy sauce
- coriander leaves (for garnish)

Wash the rice thoroughly in a sieve, transfer it to a pot, cover with water and lightly salt. Bring to a boil, cover, and simmer over low heat for about 20 minutes.

Toast the sesame seeds in a dry pan briefly, remove and let cool. Grate the chilies finely in a mortar. Heat the oil in a pan and fry the chilies for 2-3 minutes. Strain the oil and set aside.

Slice the seitan into strips about 5 mm thick and thread them onto skewers in a wave pattern. Heat plenty of oil to around 170°C for frying. Fry the skewers until crisp and fragrant, then drain on kitchen paper. Brush with the chili oil and soy sauce, toss in sesame, and serve over rice. Garnish with coriander leaves.
