Stuffed Radicchio Leaves

Filled radicchio leaves promise a low‑calorie herb‑sweet enjoyment and a generous dose of vitamin C for strong connective tissue.
Ingredients
- 50 g small mandarin (1 small mandarin)
- 75 g tart apple (1 small tart apple)
- 20 g yogurt (1.5% fat) (1 tbsp)
- 0.5 small lime
- Salt
- Pepper
- 0.25 bunch chives
- 5 g sunflower seeds (1 tsp)
- 2 radicchio leaves
Instructions

Peel the mandarin, remove the fruit segments and chop into small pieces.

Wash the apple, quarter it, core it, and dice finely.

Mix the mandarin and apple in a small bowl with the yogurt.

Squeeze half a lime and stir the juice into the yogurt mixture. Season with salt and pepper.

Wash the chives, shake dry, and cut into little ribbons.

Toast the sunflower seeds in a non‑stick pan without fat until lightly brown.

Wash the radicchio leaves, shake dry, fill them with the fruit‑yogurt mix, sprinkle with chives and sunflower seeds, and serve.
