Soda Bread with Parsley
The soda bread with parsley from Spoonsparrow is suitable for many occasions.
Ingredients
- 30 g parsley (1 bundle)
- 300 g spelt flour type 630
- 100 g spelt whole wheat flour
- 10 g baking powder (1 tbsp)
- 5 g sodium bicarbonate (1 tsp)
- Salt
- 1 tbsp honey
- 1 egg
- 30 g butter (liquid)
- 320 ml buttermilk (approx.)

Wash, dry and finely chop the parsley. Sift the flours into a bowl and mix with baking powder, sodium bicarbonate, 1 tsp salt and honey. Whisk the egg with butter and buttermilk. Add this mixture to the flour and stir with a fork until everything forms a not-too-wet dough. Fold in the parsley and add more flour or buttermilk if needed.

Shape the dough into a round loaf, make cross cuts on top, and place it on a baking sheet lined with parchment paper. Bake the loaf in a preheated oven at 200 °C (fan 180 °C; gas: level 4) for 10 minutes.

Reduce the temperature to 190 °C (fan 170 °C; gas: levels 2–3) and bake the bread another 25–30 minutes. Then remove the bread (do a tap test!) and cool it on a wire rack.
