Stuffed Papaya

Ingredients
- 2 large tomatoes
- 2 tbsp chopped cilantro leaves
- 1 onion
- 4 Garlic cloves
- 2 papayas
- 8 tbsp olive oil
- Salt
- freshly ground black pepper
- nutmeg
- 100 g grated Gruyère cheese
- 1 tbsp breadcrumbs
- 1 tbsp butter
- cilantro leaves for garnish
- 1 packet tortilla chips (ready-made)
Instructions

Blanch the tomatoes, peel, core and dice them.

Peel and finely dice the onion and garlic cloves. Wash the papayas lengthwise, halve and core them. Use a sharp-edged spoon to remove the flesh, leaving about a 1 cm wide rim. Dice the papaya flesh.

Sauté the onion and garlic in 4 tbsp oil until translucent. Stir in the tomato and papaya cubes and simmer for a few minutes. Season with salt, pepper and nutmeg, then mix in the grated cheese, breadcrumbs, butter, chopped cilantro and remaining olive oil.

Fill the mixture into the papaya halves, place them in a greased baking dish and bake at 220°C (428°F) for about 20 minutes until golden. Garnish the stuffed papaya with cilantro leaves and serve with tortilla chips.
